faux pho

pho

so i am a huge fan of pho, a vietnamese noodle soup. from what i’ve read, real pho requires hours of stewing various bones and animal parts to make a clear broth and blah blah. so i wasn’t exactly wanting to do that… but i decided to try to emulate it using convenience methods, like cartons of broth… and it turned out pretty well! my fellow pho fiend helped himself to some out of the fridge without asking what it was one drunk night at my house, and he really liked it and did consider it a pretty good knockoff of the real thing.

i made this a few days ago because i’ve been too lazy to post… it was this day that it snowed here, and i was at work and it was all blizzardy, and i just wanted soup so bad so i picked up a couple cartons of chicken broth before i went home. at home, i chopped up some onion and carrot and sauteed for a few minutes with oil, then chopped up some jalapenos and threw those in too. then i dumped in the broth, probably at least 3 cups in total. i added some other seasonings, like garlic powder, fish sauce, tamari (soy sauce), rice vinegar, lime juice, sriracha sauce, and let it simmer for a while. then i added some rice noodles and let them cook in the broth. toward the end, i threw in a lot of cilantro, some thai basil, green onion, and garlic chives and tweaked the seasoning to taste (i ended up adding a little honey because pho usually has some sweetness from the bone marrow apparently…)

and yep, it turned out pretty good!

that is one thing i love about food, is the ability to reflect context. like seriously, that entire day at work when it snowed, the soup bar was selling out like crazy… and i was craving soup myself really bad… so it’s kind of funny, and cool, how you can adapt to context to provide a meal which becomes more meaningful than it would have been otherwise. speaking of context, it’s kind of funny because my context for eating real pho is usually as part of recovery from a massive hangover… and usually in a restaurant that is attached to an emissions testing place. what a context…
