baby bok choy stir fry


so, i haven’t posted in a while because bad circumstances have befallen me… i got the flu about a week ago and hardly ate anything for days, let alone cooked anything for myself (cans of soup for days….) and then i was in a minor car accident on wednesday… but i am returning to normal life now, feeling better and back to work and all.

so i just got home from work and remembered i had this baby bok choy i needed to use, and i felt like something really fast and tasty and not too heavy because i had a little snack on my lunch break. i busted out my trusty wok and started to heat some olive oil with a splash of toasted sesame oil.

then, i just chopped the baby bok choy up and threw the stemmier pieces into the wok first, because they’d take longer to cook than the leaves. after stirring over high heat for a minute or so, i threw in the rest of it and stirred for another minute or so. then, i poured on some garlic powder, spicy mustard, sriracha sauce, honey, sesame seeds, and soy sauce and stirred it all for another minute or so before taking it off the heat.

result? tasty, slightly crunchy but tender boy choy, nice and spicy with a good balance of sweetness and tanginess. it would make a good side dish, or could be beefed up with some other vegetables or meat… or it makes a great light meal! like i’m enjoying right now along with some delicious orange juice and “the dark side of the moon”…
